Enjoy Torogoz (Eumomota superciliosa), our House roast named after our national bird. Torogóz is our default for espresso in-store and it's a lovely coffee you are sure to enjoy in a wide range of brewing methods at home. 

Torogoz is a blend of specialty beans from the Apaneca-Ilamatepec region, specifically the towns of Concepciön de Ataco and Apaneca. Torogoz is our House roast, it's a medium dark roast level we use for espresso and all espresso based drinks in store.

WHOLE BEAN

Torogoz is roasted to a medium-dark level and has complex notes of dark chocolate, dark brown sugar and a balanced acidity. For those coffee geeks out there we drop it from the roaster the very second we hear the second crack and it starts cooling immediately. There are no surface oils in Torogoz and we take the Maillard reaction as far as it can go before developing any smoke, bitter or burnt notes. Bitterness is perfectly balanced with sweetness in this coffee and it's a traditional northern Italian roast ideal for espresso extraction. This is the customer favorite roast that we have in store. 

We recommend Torogoz for Espresso, Moka Pot, Automatic Drip Brewer, French Press, Aeropress, or your favorite Pour Over V60, Chemex, and others.

We use this exact coffee for espresso in-store. We recommend 65g per liter and a standard grind size for your preferred method. We recommend to use water no hotter than 95 C.
