This is the coffee we pull all day in the shop. Chocolate first, then fruit and spice, then that earthy finish that tastes like the hillside of Cerro las Ranas where it grew on — not like it was finished somewhere else and given a Salvadoran label.
Grown in Juayúa. Roasted in San Salvador. Packed in San Salvador. Shipped from El Salvador. The same exact coffee we use for espresso in-store. Not an “export roast.”
Three one-pound bags. DHL Express included from Canada to Argentina. Other destinations pick up a surcharge at checkout.
What’s in the bag
Torogoz House Roast 25/26. Medium-plus roast. Built for espresso, and it also does well on moka pot, French press, drip, AeroPress, and pour-over. Holds up well with milk drinks.
When it was roasted
Every Friday and Sunday. The roast date is on the bottom of the bag. It should reach you 3–8 days off roast.
Give it 5 days before you brew. Give espresso about 10 if you can.
Shelf life
Unopened, it holds for about 3 months at a good quality. Once opened, drink it within 30 days. Please don’t refrigerate it. If sealed, you can freeze it for storage (once only), do not open the bag when still cold ideally leave it out overnight before opening. Do not refreeze.  While coffee does not expire in the traditional sense, it will stale with time. 
In the cup
Filter: dark chocolate, prune, molasses, raisin, cherry. A little mushroom and earth underneath. Heavy body, with a nutty, woody finish that stays.
Espresso: a bit sweeter and more spiced — chocolate, cherry, citrus, cinnamon, ginger, clove — with caramel and molasses, then that same earthy landing.
Where it comes from
Washed and natural heirloom Bourbon from Finca Las Nubes, Cerro Las Ranas, Juayúa. Grown by Fernando Gutiérrez.
How we brew it
65 g per liter. Water no hotter than 95°C. Use your usual grind for the method.
Espresso: shorter than 1:2. In-store we like pulling it ristretto style.

On the price
Due to geopolitical issues we had to raise prices to reflect the increased cost of shipping, freight has started to come back down, so we lowered the pack price. It’s still not back to the old number, but we’re working toward that.
