Named for the raccoons that live on the farms — nocturnal, masked, and always looking like they could use a cup.

This is our house natural: chocolate and fruit, sweet, balanced acidity, butterscotch body, a finish that stays. Grown on Cerro Las Ranas, roasted in San Salvador, packed here, shipped from here. Not an export roast.

What’s in the bag
Mapache. Whole bean. Natural process. 86.5 SCA. Medium roast for batch brew and pour-over; it also works as a medium espresso. Fruity and adventurous without getting too wild. 

When it was roasted
Roasted weekly. You’ll usually get a bag 1–10 days off roast. Email us if you want the exact date on the current batch.

In the cup
Chocolate and red fruit. Sweet. Balanced acidity. Velvety, butterscotch texture. Clean linger. Easy to like, hard to get tired of.

Where it comes from
Heirloom Bourbon from Finca Las Nubes, Cerro Las Ranas, in the Apaneca-Ilamatepec range above Juayúa. Grown by Fernando Gutiérrez. Most of the trees are 50–60 years old, from the same Bourbon line that made Salvadoran coffee famous.

On the price
Shipping costs went up with the wider freight situation, so we had to raise prices. Freight has started to ease, and we lowered the pack price to match. It’s still not the old number. We’re working toward that.
